Marrow. Y'know, from bones. Is there an easier way to get the stuff than to actually cook meat of some sort and then spend an age breaking the bones in any way possible?

I think most real butchers still sell marrow (i.e. at a real butcher shop instead of a grocery store meat counter.) My grandmother used to buy the stuff and spread it on toast :-P

Well I've found 'marrow bones' which are bones cut in such a way you can get the marrow easily.

'S another great reason to be Australian. Lamb forequarter chops with huge chunky marrobw bones right in em, cheap. $13 aus a kilo. Fry em up, cover em in mint sauce and eat em. the suck the goodness out of the bones. YUM!

If you poach the bones in boiling water for a short time it loosens the marrow. Then cool it down and cut around the outside with a thin knife. It's how I get it out to make my Beef Bordelaise.
