Not *all* my groceries, because there are some things that for whatever reason I am more likely to find actually at my store, but many of them.

Which I'm doing right now, except I'm a bit stymied by the fact that I'm not sure what I'm making for dinner all week. Quick, suggest some meals for me!

Country Captain is a fairly simple one-pot dish which tastes good and can last for several meals.

Here's my variant of the recipe:
2 trays of skinless, boneless chicken thighs (about 2.5 kg) or equivalent cut up chicken pieces.
1 C flour
Salt & pepper to taste
3 Tbsp oil, Extra Virgin Olive Oil preferred
2 Med green peppers cut into 1 cm pieces
1 med onion, chopped (or 2 Tbsp onion powder)
1 Tbsp garlic powder or 2 cloves, chopped
2 Tbsp curry powder or curry paste
2 cans tomates. Can be chopped or crushed as you wish
Handful raisins or currants
1 can sliced black olives (optional)
Pinch of slivered almonds for garnish

Cut chicken into bite-sized pieces and dredge in flour, salt & pepper;
Heat oil in frying pan, brown chicken pieces, drain and reserve;
Saute green pepper and onion in drippings (add oil if necessary to prevent sticking);
Add garlic and curry, stir until mixed (a little water can help to deglaze the pan);
Transfer to pot, add tomatoes, reserved chicken, raisins and olives (if desired);
Simmer for at least one hour. Add water if necessary (It's better the longer it simmers)

Serve over freshly cooked rice; Basmati is best. Garnish with slivered almonds if desired.
As with any stewed dish, this is best the next day.

When I can't think of anything else to make for dinner, I reach for the frozen ravioli.

Pasta with broccoli, tuna, chickpeas, and lemon-tahini sauce is good for a hot day when you don't want to turn on the oven. (Frozen broccoli is fine for this, or steam fresh broccoli before you cook the pasta. Canned tuna and chickpeas, so very pantry-friendly.) We sometimes add half a red bell pepper. If you want to leave out the tuna to make it vegan, you should add a little tabasco or sriracha to the sauce.

Fish tacos. From frozen fish fillets, cabbage (or coleslaw mix), flour tortillas salsa verde. Or these with sweet potatoes. https://smittenkitchen.com/2018/03/sweet-potato-tacos/

Roast roots with a few chunks of chicken sausage.

Frittata with diced pre-cooked root vegetables. (Or raw apple.)

Easy meals around our house:
- Burritos
- one pot "hamburger helper" style pasta, protein and veg
- agree with the above, cheese toasties with tomato

I do a split of shopping - there is stuff I want at Costco so I shop in person there, but for other things, I just put in a click and collect order. It's brilliant to just drive up and have them load your groceries into your car.

My no-brainer is pasta (usually rotini because that's what I usually have) with cut-in-half cherry tomatoes, minced parsley (omit if not available, or substitute with basil or whatever), some canned sliced olives, and Parmesan. Adapt as needed.

Chicken parts seasoned with whatever's around and quick-baked or broiled, with cut-up potatoes scattered on the pan to also cook, or mashed if you feel like that

Cold sliced ham and potato salad

Tofu teriyaki, tofu cut in cubes, tossed in potato starch, fried to brown, throw teriyaki sauce on top last minute and toss to coat, serve on rice with scallions and sesame seeds

Broiled fish with some vegetables (usually salmon or halibut here)

I am feeling similarly uninspired, so I came to read the comments!

My plan for this week is - I bought some "al pastor" seasoned pork and I will cook that up, along with red and green bell peppers and onions, and have that, with salsa and cilantro on my mini naan breads that I bought from Costco.

I also have a bag of spinach that probably won't last another week, so I was thinking of something involving chicken, onions, spinach, maybe some celery. I also have broccoli and cauliflower too.

I am perusing

Ooh this one has broccoli - and I can totally toss in the spinach - https://diethood.com/chicken-vegetables-skillet/

Stir-fries are easy and quick to make. I cut up chicken breast into bite-size piees and store them in single-serving bags in the freezer. I defrost this by immersing the bag in cold tap water, then drain the chicken and stir-fry it with whatever comes to hand - snow peas, nuts, canned vegetables, etc.

One of my parent's go-to's was toasted cheese/tomato/bacon open face "sandwiches".

The other day I took a burger bun and added syrup, breakfast sausage, a fried egg, and a slice of cheese (and extra butter) and made a homemade close approximation of a "McGriddle" sandwich.

I'm also a fan of any one-pot meal where everything can just be tossed in the slow cooker or instant pot and kept warm for a couple days while working through it. Soup, stew, chili, etc.

Salsa Couscous Chicken is so easy and so good. It won the top award in Pillsbury's recipe contest back in the nineties, so I have nicknamed it, "Million Dollar Chicken." I serve it with rice because whole wheat couscous doesn't reheat well. I use Mild Pace Picante Sauce now (heartburn is an issue) but any brand of jarred salsa works fine.

EDIT: I have most of my groceries delivered now as well.
