I gave up waiting for her to give me all her deductible information and told her I'd simply submit an amended form if she ever got around to it, and if she doesn't like it she can do her own taxes. I feel accomplished!

Ana finished her final edit for her writing course... and then accidentally deleted the whole thing when going to copy it. D'oh! Lately she's been going to book club once a week way uptown. She loves it. She loves the kids, loves the group... and really loves that we trusted her to find her way to 86th street on her own, and to get back on her own every week. Trust may be overstating it. I was fraught with anxiety her first week. All I can say is, thank goodness for cell phones! Next week she forgot to bring hers. Naturally.

Yo, about the rice: here is how I cook mine: start with 2 cups of rice and 2 tablespoons of raw virgin coconut oil in a cold pot. Turn on the high heat and fry the uncooked rice (stirring constantly so it doesn't stick) until it starts to look a little 'puffed'. Then add 4 cups of water and stir; let it come to a rolling boil and stir; put a lid on the pot and reduce the heat to 'simmer'.

When there's no more sound of boiling, and/or no visible liquid when you tip the pot, turn the heat off and let the pot sit there till the burner is cool. Serve some rice immediately (we put Bragg's Amino Acids and/or Balsamic vinegar on it) and put the rest in Tupperware; it'll stay fresh for more than a week in the fridge.

I don't know about the calorie content, but it's extremely nummy and filling; much more so than rice that just has the coconut oil added afterward. It's great nuked plain for brekkies, or underneath any kind of topping-glop you like, either savory or sweet.
