now, the one I really want to know how it works is the little red nubble-replacement mouse.

When you move your finger it can sense the moment accross the 'mesh' and it will then send the signal to your computer. The reason why it works when you use paper is because paper isn't a strong enough insulator to disrupt the field that your finger gives off. The reason erasers and metal pieces don't work is because they don't have their own field (at least in the same range as your finger) so the touchpad is not affected by them.
