I just read an article today that said there were 14 different versions of the spelling, all considered acceptable. I'm not sure how you move those letters around in 14 different ways, but there you go. I use the 'ch' spelling because the jr. high I went to for a couple of years had a lot of Jewish kids, and that's how they spelled it. But I can change if I have to!

The ‘ch’ is sometimes transliterated with just an ‘h’, and now sometimes as ‘kh’. The middle ’n’ could be doubled, as could the middle ‘k’, and the final ‘h’ could be left off. Which leads to lots of options.

I tend these days to use Hanuka in a minimalist colloquial approach towards transliteration.

I answered assuming you were asking how I personally prefer to spell it, not what I think the proper spelling is. Because I am no sort of authority. Even my preference is meaningless.

First option is good, but so are others. There's more than one standard and various conventions for transliterating Hebrew into Roman characters, and Wikipedia has details.

I think the years our kids were in a Jewish preschool tainted my answer. I mean, I spell it with the CH even though most people use the first spelling. But the "ch" and "h" are different sounds, and the real word definitely uses the ch.
