Mac and cheese!

We're going to be eating a lot of salads and crockpot meals. My husband accidentally bought double lettuce, I already had a small head of lettuce to use up, and I'm getting more lettuce in my CSA on Sunday. The garden tomatoes are out of control, too. Next year, I'm planting herbs, too.

Crockpot ingredients are win right now at my end.

Basic mix is:

* Pile o' meat
* Appropriate vegetation (usually carrots/celery/onion)
* Broth
* Spicing to preference.

(I have a variety of homemade spice pre-mixes so I can just throw some in for "we're having $ethnicflavor stew tonight")

I don't plan two days out, much less two weeks. My purchases are aspirational. What gets used or not used is what the freezer is for, to compensate for my inability to make up my mind more than a day or two out, for the most part.

(But I do have cravings. And their opposite: days I'd almost rather starve than eat whatever I don't want, which is why I don't make meal plans.)

I'm pretty good at meal planning, including repurposing, but you've got to give us some constraints to work with. What do you like? What don't you eat (allergies, special diets, etc)? What staples do you keep on hand? What do you need to use up Real Soon Now? How much spare room do you have in your fridge and freezer?

Budget Bytes has really good meal ideas. Some of my faves are her hearty black bean quesadillas, spinach and artichoke grilled cheese, spanish rice, or baked sweet potatoes with chili.

I don't know your dietary parameters, but one that works well for me is to roast a chicken, have the remaining leg-and-thigh for lunch the next day, and then make chicken a la king out of all of what's left over. (Dice chicken and add to a jumbo can of cream-of-mushroom soup, along with a dozen large crimini mushrooms and an onion that were diced and browned in schmaltz, a pound of frozen peas, a pound of frozen broccoli, a lot of dill, and a random cruise of the spice rack.) Serving the chicken a la king on toast, that's enough for several meals.
