We're going to have a party, remember? Everybody start posting in 22.5 hours to celebrate. Also give me some recipes, I'm hungry, and food is always good at parties.

Here's my favorite celebration snack, just reciting from memory... :)

Ingredients:
1 can refried beans
1+ cups sour cream (depends on how much you like it)
Small jar of your favorite salsa
Quite a bit of your favorite cheeses, grated
Whatever "tiny" toppings you enjoy (olives, garlic, anchovy bits, etc)

1. Mix the refried beans and sour cream. Cover the bottom of a pyrex or similar dish with the result. Put in fridge for an hour or two to solidify it.
2. Evenly pour jar of salsa to completely cover the previous layer.
3. Sprinkle grated cheeses over top to completely cover it.
4. Sprinkle your favorite toppings all over the top of the cheese.

You can also add a second portion of any of the ingredients to other layers, i.e. sour cream with the cheese as well as with the beans, salsa in with the beans as well as on its own, cheese in every layer...

You then stick the whole thing in the fridge, and take it out a while (45 minutes?) before you want to eat it. You can either scoop the results onto heated tortilla shells to eat burrito/taco-style, or use your favorite chip (potato, corn, tortilla, etc) to scoop it out dip-style.

This might be good for the babies, actually, if they're at the point where they can have sweets. It's from our family cookbook, the notes are my mom's. The cake itself isn't as sweet as some cakes, it's the frosting that does it so it can be left unfrosted according to taste (or, if you're like me, over frosted according to taste :). Very easy, very quick.

Chocolate Sheet Cake

“This recipe was originally given to my mother by her college roomate. It as since become a crowd pleaser in several households.”

Sift together in a large bowl: 2 cups sugar, 4 tbls cocoa, 2 cups flour.
Put in saucepan and bring to boil: 2 sticks butter or margarine and 1 cup water.
Pour butter mixture over dry mixture and mix well.
Add 1/2 cup buttermilk (1/2 tbls of lemon juice to 1/2 cup milk for a few minutes)
Spread on jelly roll pan (cookie sheet) and bake at 400 degress for 20-25 minutes.

Frosting:

Bring to boil 1 stick of butter or margarine and 1/3 cup milk. Remove from heat. Sift 1 lb of powdered sugar and 4 tbls of cocoa together. Pour butter/milk mixture over dry mixture. Add 1/4 tsp vanilla. Mix well. Frosting may be spread on warm cake.

This recipe is very easy and makes a large cake that is sinfully rich and delicious. I never plan on having any leftovers. (We even used this recipe for cake at our wedding!)

Thai Chicken-salad

You need: chicken breast, lemon-juice, a bit oil, fresh mint, fresh chili, salt, ground pepper, sugar.

Cut the breast into little pieces, stir fry them (it's great when they're a nit crunchy). Make a dressing from lemon juice, a bit of oil, salt, pepper and sugar. Add chopped chili and mint (chopped very fine) and mix it with the chicken. Let the dressing soak the chicken and serve it while it's still a bit warm.

I fear I won't be able to attend your party but have fun ;)
