You can't get canned beans? That's what I do - mainly because my husband can't handle the ones you have to soak. (Gut microbiomes are weird things...)

my new favorite recipe now, I just use canned beans instead of soaking/boiling/etc. Saves a LOT of time. I think I use navy beans - I use pintos when I'm making refried beans.

There's a "quick soak" trick you can do.

Take the beans and put them in a pot with 3 cups of water for every cup of beans. Bring the beans and water to a boil for 2 minutes. Then remove from heat and let them stand for an hour.

This *works*. I've *never* gotten the "soak overnight" method to work.

The overnight soak only works with relatively fresh dried beans (sounds like an oxymoron, but it's not). This method is IMO the way to do it. When I've soaked overnight, I have had variable results, meaning, sometimes no beans.

Rancho Gordo dry beans seem to be fresher than others.

For me, glazed carrots, and maybe a flourless chocolate cake. Both are very quick builds, though the cake requires 4-6 hours to properly chill.

It sounds like plenty as it is; well done, and happy Thanksgiving!

I'm buying two store-bought frozen lasagnas and calling it good; our seven potluck Friendsgiving guests can bring whatever else they want to eat. We're well-supplied with drink, both alcoholic and non; it should be a merry gathering.
