I wanted to make onion kulcha, which I'm massively craving and haven't made before. All the recipes call for 3 cups of flour. I'm dubious... will that make, like, six or seven servings? I only want three.
IIRC, kulcha is made with fermented flour, which DOES NOT STRETCH. So three cups will NOT be too much.
I made the mistake of making dough for chana bhatura and measuring as much as I would make for puris. everyone I'd invited for lunch that day went hungry.
Do they ask you to mix it with yogurt and leave it out overnight? I'm not a huge fan of kulcha, so I'm not sure how the dough is made. Naan IS made with fermented dough and baked in a tandoor, but if you have a tandoor on hand, I'd be very impressed.
