As long as you're not trying to sub in place of smoked shoulder.

I've done it for carnitas and for chili verde, so I don't see why not.

In my experience it's a lot easier to find shoulder than butt in the stores, so I think of the substitution in the opposite direction... but yes, they're pretty similar cuts, differing mostly in the complexity of the bones. In either case you're probably going to roast for a number of hours at 250F or less until the meat falls off the bone, right?

I think mostly, pork shoulder is the name some grocery stores use for what butchers call pork butt.

Sorry, I know it's not much to work with, though if you give some details on what you're working on maybe I can give you something more detailed?

Ahh, so something roast-like or just requires a long time to cook. In that case, yeah, the differences will be minimal to nonexistent.

The article about scientists developing allergies through research exposure didn't mention latex allergies. I don't know if that's because latex is so boring compared to snakes and bugs, or because so much of it happened way back in the 20th century. (I am Old.) Or maybe just because they invented nitrile gloves, and you can't really invent a hypoallergenic snake. Anyhow, a lot of researchers, as well as a lot of medical workers, had increasingly bad allergies. It took them quite a while to figure out they hadn't failed to recognize latex allergies in students; the allergies were developing through repeated exposure. So the "push through discomfort and don't be a wuss" that's so common among EMTs, nurses, interns, etc...was pushing them closer to anaphylaxis.

Pork butt = pork shoulder. Different names for the same cut. Or at least it was when I took Livestock Science in H.S. Google seems split on the issue, with some sources saying the butt is higher on the hog. Either way, it's high-use muscle that needs a long slow cook.
