I decided to add the cinnamon. Mmm, it is delicious. I guesstimated a little cinnamon and a sprinkle of cayenne to the Cuisinart "simple chocolate ice cream" recipe, then added slightly more sugar. I should've removed some of the cocoa powder from the recipe instead to compensate, I'll do that next time. But it seems to have come out all right in both taste and texture.

Lesson learned: it's no good trying to wash and dry the bowl as fast as possible to speed its re-entry to the freezer, the drying cloth sticks to the bowl like a tongue to a flagpole. I have got to get a second bowl.

That “seems to have come out all right” reminded me of the WWII anecdote told by Bill Mauldin in Up Front, how they were trying to make biscuits but had no flour - so they used GI tooth powder instead - and the result was perfectly good!  He said no one complained or even seemed to notice…

We have the same ice cream maker. That chocolate ice cream is infinitely adaptable. I'm pushing for adding some chopped nuts to our next batch.

Dang it, and one of the ice cream recipes I was going to send was "mole" ice cream... but yay!
