And I guess I should post recipes so people can make cookies.
So. Actually, it's not cookies. It's apple cheesecake.
Amount Ingredient -- Preparation Method

1c Graham cracker crumbs
2c Sugar
1t Cinnamon -- divided
3tb Margarine -- melted
16oz Cream cheese -- softened
2 Eggs
1/2ts Vanilla extract
4c Apple slices -- thinly sliced, peeled, about 2 1/2 lbs apples
1/2 c Pecans -- chopped
Preheat oven to 350~. Combine crumbs, 3 tablespoons sugar, 1/2 teaspoon cinnamon and margarine in small bowl; mix well. Press onto bottom and up sides of 9-inch pie plate. Bake crust 10 minutes.
Beat together cream cheese and 1/2 cup sugar in large bowl until well blended. Add eggs, one at a time, beating well after each addition. Blend in vanilla; pour into crust. Combine remaining 1/3 cup sugar and remaining 1/2 teaspoon cinnamon in large bowl. Add apples; toss gently to coat. Spoon apple mixture over cream cheese mixture. Sprinkle with pecans.
Bake 1 hour and 10 minutes or until set. Loosen cake from rim of pan; cool before removing rim of pan. Refrigerate.
I'm not sure how good this recipe is, but it looks like the type they have at Vida's, so....

Date: 2004-08-22 08:06 pm (UTC)If you can get Gala, Jonathan, any of the -spy varieties, or (top choice) Gravenstein, you have it made. From what I've observed, the majority of the really good cooking/baking apples are green with pink/red-blushed cheeks.
Why, yes, both my parents and grandparents have apple orchards. Why do you ask?

Date: 2004-08-22 08:20 pm (UTC)I've noticed that red apples that aren't mainstream (that is, they're sold unwaxed) are actually edible... but I wouldn't trust a stereotypical "red apple" (the macintosh) or a red rome with my life. Then again, I wouldn't trust a granny smith with my life either, but at least they taste like something.
