I've been feeding my starter maybe half a cup of flour per week. Five pounds would last a LONG time at that rate.

Or is this a case of "don't already have a starter, let's see what's already living on the flour"? In which case it might take more to get a decent sized sample.

I was looking at sourdough starter recipes yesterday and was appalled a the amount of flour called for. You were supposed to feed your starter 3/4 cup of flour every day for five days, which must make a huge amount of starter, then you only need about 1 cup of it to make your bread. A huge waste of flour!
