Also, I have FOUND the trick to never having potato pancakes or meatballs or fish patties ever fall apart. Two teaspoons chia seeds to a bowl of stuff-to-be-fried, let sit for 10 minutes, and it works wonders. You can do this as your binder, but I've just been adding it to my existing recipes.
