Picked up the following:

One dozen eggs
Quarter pound of I don't know what
Three bunches scallions
Two bunches (two each) broccoli
Pound of kale (KALE!)
Four (4???) heads lettuce (quick - I need a way to use up lettuce that's not salad!)

Lettuce wraps.

Diced or strips of meat of choice (or tofu if you want that instead)
Some hot/cold vegetables, also cut small
Whatever sauce you like

Put fillings in lettuce leaves and fold up like a tiny burrito. Eat. Enjoy.

I've done this with pork shoulder cooked in orange juice and rosemary and used some tomato and cucumber as vegetables. It was very yum.

You can stir fry (http://chinesefood.about.com/od/vegetablesrecipes/r/fried_lettuce.htm) it, you can just fry it (http://www.cdkitchen.com/recipes/recs/67/Fried_Lettuce52739.shtml), or you can use it as a wrap (http://www.cookiemag.com/food/2008/04/tasting_school).

You can also, apparently, stew it (http://recipes.lovetoknow.com/wiki/Stewed_Lettuce_Recipe_2). (This one came as a surprise to me, too.) If it's a crisp lettuce, you can stuff it (http://www.recipezaar.com/108868). And here are three recipes for Cream (http://fooddownunder.com/cgi-bin/recipe.cgi?r=79999) of (http://fooddownunder.com/cgi-bin/recipe.cgi?r=79998) Lettuce (http://fooddownunder.com/cgi-bin/recipe.cgi?r=79997) Soup.

I hope this helps.
