What part of the lime are you using? If you're up to dealing with a half doen or so, you can grate all the zest and freeze it, and then juice all the juice and freeze that into ice cubes.

ETA what happened to my formatting?!?!? peel off the zest with a vegetable peeler.
place the zest strips in a blender or mini food processor
blend/chop until fine
scrape out of the device onto platic wrap
pat into a thin rectangle
place in a freezer bag
freeze
break off pieces as needed
