I can never get that right. I finally switched to a little tabletop propane grill because I was so crap at figuring out charcoal.

A friend is superb at grilling with charcoal. He does all the right things and everything comes out spectacularly delicious. It can be done!

I've about concluded that I need two charcoal chimneys, because even when I completely fill the one chimney, it's never enough coals for anything that needs significant cooking time or that requires a large amount of space.
