Violet, maybe? Saffron-cardamom-raisin? (That's something Tosci's made a batch or two of, and I liked it a lot but never saw it again.)

I came up with a dozen ordinary and not so ordinary flavors of ice cream for some fantasy horse characters. How about peppermint and tart apple ice cream? I don't recall ever seeing any kind of apple flavored ice cream anywhere.

I have seen apple pie ice cream, but not apple ice cream without the bits of pastry.

How about sangria? All the fruity loveliness might work well in a dessert.

I'm trying to think how to make veggie potstickers into an ice cream flavor, but it's not working very well. Scallions and ????

Not the seaon for it, but once in the 60s either Carnation or Darigold made up an ice cream I've never seen since: Strawberry, vanilla, blueberry. Set up like neapolitan. So it was like a tricolor flag.

It was for the 4th of July, natch.

I love green tea or red bean ice cream

Yesterday we made coconut almond icecream for a friend who is allergic to dairy. It was yummy. That I, who am a dairy snob, says that is significant.

We used:

400 ml can coconut cream
1 small egg
1/4 c sugar
3/4 c almond meal
1/4 c roasted coconut flakes, chopped fine in a mini food processor.

This freezes really fast in an ice cream maker compared to dairy based.

We made a berry compot to serve with it.

IF you can still get good eggnog, I was amazed at how good the simple base was substituting eggnog for whole milk. The rest of the base being heavy cream, sugar, pinch of salt, and vanilla.

I don't know if my next batch will be blueberry or peanut butter. I've got two weeks to decide, and get my wife's input.

Chaiscream (i.e. chai ice cream) is my household favorite!

I've also really enjoyed grapefruit with poppyseed (you boil down grapefruit juice into a syrup to make this).
