I meant to cook the last of that chicken yesterday! Luckily it was still good.
Today's dinner:
(This is about half google and half winging it)
Cumin seeds (probably optional)
2 small yellow onions, chopped
a teensy bit of ginger, finely grated
1 chicken breast, cubed
Maybe a third of a cup of dried fruits (I used cherries, raisins, and dates - but I'm pretty sure nearly any dried fruits will work well) soaked in enough hot chicken broth to cover them
An orange vegetable, chopped (I used two carrots. Sweet potato or pumpkin/butternut would work as well, so would parsnip though it isn't orange - anything with a mildly sweet flavor.)
Cinnamon, salt, black pepper
Something sour - google suggested balsalmic vinegar. I used pomegranate molasses. Cider vinegar would work too.
Cook the cumin in oil over medium-low flame, add in the onions until translucent. Add the ginger and stir, then add the chicken and cook until browned. Add in your fruits with the soaking water and also your chopped up orange vegetable. Cover, raise the heat a bit, cook until your vegetable is soft. Stir in your salt, cinnamon, black pepper. Add your something sour - just a little goes a long way! Serve with a grain. I used couscous.
You could stretch this by adding cooked chickpeas.
If you don't like cinnamon with meat, you could probably get something good by swapping out the cinnamon for a small amount of tarragon and/or thyme, and maybe adding a potato with your carrot etc.
