Tonight's dinner

1 small onion, or half a medium onion, chopped roughly
2 cloves garlic, pressed or diced
1 good chunk of ginger root, grated or diced
1 bell pepper, any color, chopped roughly
Oil
1 pound pork chops (you could use chicken if you prefer), cut into cubes and lightly dredged
Maybe half a pound of pineapple, cut into large cubes
Orange juice
Cornstarch
salt and pepper to taste (and optional red pepper flakes)
Juice of one lime
Cilantro
Scallions
Cook all the aromatics in the oil until soft. Add the pork chops, brown, add the pineapple. Cook down for a while, add a small amount of orange juice with cornstarch in it in order to thicken the sauce. Season, add lime juice, serve with rice, topped with the cilantro and scallions.
That's pretty filling. You can serve green beans or broccoli on the side, steamed, or roasted with garlic, or cooked however else you like.
