I'm tomato averse in any case. A nifty taste I've found for beef stew is just a hint of powdered clove. Rounds out the taste somehow--I'm talking 1/4 teaspoon for 6 servings.

depends, for me, on what other veg - and quantity thereof - are involved. When I make beef stew, it's usually tomato-free, but I use plenty of tomato in other things. Last week I made a half batch of chili, which normally causes some digestive problems for my wife, but she's willing to look beyond that as it's quite good. I thought I had diced tomatoes in the larder, I did not, so I used a can of tomato sauce instead. Tasted fine. she didn't have digestive consequences.

So an interesting data point and something to consider for further future experimentation.
