But on another note, what should I make that's filling and fast and a surefire winner for the kids to eat before they go out tomorrow? I have a few ideas (mostly focusing on this ground beef I bought yesterday) - what's everybody else making?

my family likes a one-pot dish we called 'goop' - pretty fast & easy; doesn't look like much, but tastes good


Goop

1 lb ground beef (can also use ground turkey)
½ c chopped onions
16 oz can vegetarian baked beans (we use Bush's)
¼ c ketchup

Brown ground beef & onions; add beans and ketchup

Heat through

Double recipe for larger groups or planned-overs

it really is - just need a skillet (or maybe a dutch oven if you double it) and a little time to chop onions. throw it in the pan and brown with the meat, add the other stuff and heat through. it's good with some veggies or a salad on the side

Pasta with meat sauce is my go to work ground beef, but I guess that's only fast if you make the meat sauce in advanced.

My approach to meat sauce is more meat than sauce, and takes maybe 15 min longer than it takes to saute the meat:

1) Saute as much ground beef as the pan will handle. Drain fat.

2) Add a ~30oz can of tomato sauce.

3) Season with generous amounts of garlic powder and onion powder and maybe some celery salt. Stir extremely carefully as pan will be extremely full.

4) Simmer for a little while with lid on, while boiling up pasta in another pot.

I put a lot of veg in my meat sauce. Onions and garlic always, and then whatever is in the house. Mushrooms, celery, peppers, spinach... So I end up spending a fair amount of chopping time.

Other than that, it's a similar recipe.

I second the rec for sloppy joes; there's also tacos-from-a-kit, with lettuce and shredded cheese and sour cream on the side to be added according to preference.

Quesadillas are always fast and filling. I take it no long-burning stews are in the idea list?

Mac and cheese and ground beef is quick and filling but really unhealthy.

I spent last night converting a dozen English muffins into breakfast sandwiches to be frozen and microwaved when desired, so I think I'm good.

Because of the weather though, I'm always leaning towards soup. Quickest soup I'd make is a hybrid egg drop using dumplings boiled in a pot of water, then once cooked, remove the dumplings, add chicken stock, add water-infused starch, then eggs and some vegetables before returning the dumplings and a finish with sesame oil. Add rice or noodles if you need more carbs.

I'm mostly subsisting on beans mashed potato-style with lots of garlic salt and brown rice these days. (Not kid-friendly for supper, but I LOVE putting cream, brown sugar, and mangoes on brown rice. It's everything you want in a hot/ cold texture-contrast dish.) May the Great Goddess especially bless the inventor of the slow cooker!
