Apparently, it's very often undiagnosed.

Classic symptoms include diarrhea, abdominal pain, gas, bloating and weight loss.

But many patients don't experience those signs and instead report so-called atypical symptoms, including a blistering, itchy skin rash, anemia, short stature, delayed puberty, infertility and tooth enamel defects.

So, now you know. I don't envy anybody with this disease... gluten is in EVERYthing, unless you make it yourself, from scratch. Well, cooking's fun, sure, but not when you have to take the sort of steps about your diet that one'd expect from an Orthodox family. (And I don't envy Orthodox Jews either, for that exact same reason.)

Do things made with rice flour contain gluten? Maybe it's because of the large Asian population, but it's relatively easy to get products made with rice flour around here. My ex, who claimed to be allergic to milk and wheat (though he never got tested for any kind of food allergy or intolerance) always ate things made with rice flour.

I think rice is gluten free, but most areas do NOT have many products with rice flour. I'm not an expert, though.
