I know a Latina social/medical entrepreneur who is working on founding a new senior center in the 50%+ Latino neighborhood next to the one my clinic is in. Her secret sauce for attracting grant funding and other necessary approvals? Adobo, pico de gallo, and verde mostly: she makes much of her plan to serve culturally appropriate food to her clientele, or as she put it to me, food that isn't bland, or, as she hasn't put it to me, food that isn't just white-people food.
