Why are scarecrows a symbol of fall? I thought you put them up in the spring to keep birds from eating all your seed, yeah? I can understand why they'd be useful to protect your crops until they can be harvested, but why are they solely used to mean late autumn?

Scarecrows are made with straw, and straw is harvested at the end of summer, so you make scarecrows at the end of summer? Beats me, but that would be my guess.

European cultural memories of Harvest Gods that 'die' (or are sacrificed for the good of the community) in the fall?

My parents (they farm) use them in the fall to keep the crows out of the corn. Other than that I don't think they have to much of a problem with the seeds, the cats and dogs take care of the ground coverage.
