Mmm.... Chicken....
Nov. 23rd, 2003 06:02 pmSo, I'm making quesadillas. And I decided to make them with chicken this time. Found out that deboning a chicken is very messy, and tedious. But. Moving on.
First, I put some adobo, some pepper, and some paprika on the chicken, then I fried it up with a small onion, quite a bit of cilantro, and a little garlic. Oh, and half a hot pepper. That is GOOOD. All by itself.
Anyway, for the full quesadilla recipe, just put some grated cheese (I bought pregrated cheddar/monterey jack), some salsa, some corn (fresh, and it is good, gives you some texture) and, of course, your chicken in between two tortillas and bake it for 10-15 minutes. Eat with sour cream. Or not. Whatever.
