If there's something you can make that comes very easily to you, but impresses the socks off of everybody else (thereby combining the properties of "realistic" and "extremely over-the-top" in a very satisfying way!), do that. Otherwise stick with "realistic".

Go overboard if and only if preparing for family Thanksgiving at home isn't already draining you (including if you're all going to be eating at someone else's house and they just want you to bring a plate of roast potatoes or something else simple).

It depends on your goals for the potluck. If it is merely to contribute and feed people, realistic with fudge. If it's to make a point to teachers, staff, and/or other parents, as far overboard as you can without tapping yourself out for family feasting.

Fudge is generally much appreciated, but for a potluck like that, you'd need to make quite a bit.

Define 'overboard' - what's the usual standard for these things? Cupcakes, deviled eggs, crock-pot corned beef, lasagna? Will it be 'sit down and eat a real meal' or 'mill around the table snacking'?

Can't go wrong with pumpkin pie! ^^

Good for you! Heh, you can never have too much pie.

One of my favorite things to bring to potluck is a platter of sliced cantaloupe and honeydew, artistically arranged. It's nice to have something sweet that isn't full of refined carbs, and cantaloupe is one of the healthiest foods (http://www.whfoods.com/genpage.php?tname=foodspice&dbid=17), that we all ought to eat more of.
