
Because she gets home later than 'dul (and was running quite late all this week), on her night home-without-him, I occasionally start dinner. This way it's just about done when she's home, instead of being done much later.
I'd meant to have it all done when she got home, but my scheduling was a little off, and with one thing and another it got done at her normal home-without-'dul time. Oh well. It was still nummy.
Allow me to pat myself on the back a few times when I tell you that the Lime and Thyme chicken was some of the most delicious chicken I have ever tasted. The rice to go with it was nummy (yes, Lizziey, I did steal your habit of cooking with stock), and went fantastically with our mashed sweet potato (which was delicious). The lentil-stuffed bread was good (okay, I didn't like it that much. The lentils were great, the bread part... I'll do better next time), and the fried plantains, excepting the ones that burned (!) were delicious. But it's hard to mess those up, short of burning them.
Oh, and we had a strawberry/banana/avocado salad for desert, with ginger syrup dressing. And that, my friends, was wonderful.
And I'm really glad, even though I was running a little late, I managed to get everything started at the right times so I didn't have to try and rush and do 100 things at once at the end. (Never frying two things at once again, though.) And I didn't make the kitchen a huge mess, either. Indeed, given that I did all of the last night's dishes, it was arguably neater than it had been when I started! So I'm really proud, and I want overenthused compliments, thanks.
