Gonna make fondue tonight

Chocolate fondue, not cheese.

My mother got me a fondue pot for Christmas, this was both of our ideas, but I think she thought I mostly wanted to make cheese fondues so she keeps suggesting that and I keep thinking "BUT CHOCOLATE!"

I'll have to make a cheese fondue soon anyway, it's only fair. Does anybody have any recipes?

gruyere swiss cheese
Jarlsberg or emmentaler swiss
white wine? (or white grape or lemon juice if wine isn't an option)
maybe gouda? depending on preference
You might need a roux (water/cornstarch)
Uhhhhh....think that's all my mother used.

I went looking for recipes, but it seems most of what's in search add garlic and half a dozen other things that probably shouldn't be in there if you're all about just the cheese. :)

Dammit, there was some culinary additive that could be used to ensure things like cheese and milk don't curdle from heat, but I can't think of what it is off-hand right now. :(

The one I use is mainly Emmentaler and Gruyere. (8 ounces of each)

1) You start with a hot fondue pot containing 2 cups of white wine, and a small amount of kirsch and garlic.
2) You dice both cheeses, then coat them in cornstarch.
3) When the wine is hot, you start dropping in little cubes of starchy cheese, until it's all in.

Keep stirring while the cheese melts. Don't let it boil.

I could have sworn Alton Brown talked about some magic chemical--sodium caseinate, maybe?--when he reloaded fondue in the new generation of Good Eats!, but there's no mention of it in his posted recipe.

I wish I could help, but every time I'm reminded to cheese fondue, I just keep thinking of the Asterix book where they had the orgy with a massive and very messy one... oh, and the episode from the old Supersizers show with Sue Perkins where they had both sorts of fondue. I get the feeling that the cheese one especially will fill you up to the point where you will NOT want to clean up the resultant mess any time in the near or not so near future {veg}

Of course chocolate. Why would you bother with cheese when you can have chocolate?
