which is a pity, because I love dying eggs. So when Jenn told me she was going to add eggs to her salad more often, I ran right out to get the egg kits!

Me: Hey, sweetie, how many eggs do you want to dye?
Angel: Um, six?
Me: Wow.
Angel: Four? Wait, is that a lot?
Me: Let me put this into context. Yesterday, I purchased 54 eggs.
Angel: Oh.

Me: Sooooo, we're dying eggs!
Mommy: You must be kidding. Who's gonna look for them!?
Me: Um, Jenn?
Mommy: Makes sense. Well, just make sure you remember where you put them all. You remember that one year...
Me: I do. I do remember that one year.

SO MUCH EGG DYING

one year my mother and her siblings found one fewer egg than her parents hid. the next year, they found one more. in related news, all our Easter egg hunts used plastic eggs filled with loose change.

Oh, hell, I bet we don't have any white eggs! Just browns and pale blue-green. Which are pretty on their own, but I like to dye and decorate, even though it's just the two of us again this year. Bah.

The browns make really lovely rich warm tones--red, yellow, orange dyed. And super avocado greens. Not sure what the blue-greens will do, though probably disappear in the blue-violet-green range.

Both can be decorated! If you want to extract the yolk and white to cook otherwise than boiled, you can be more free in how you adorn the shells.

Hard-boiled eggs can be deviled, turned into egg salad, used as a topping whether minced or sliced. They make a good pack snack as long as peeling them isn't an issue.

Wax resist or wrapping in onion skins are two methods.

One year my sister and I found all the eggs and decided to hide them for Dad to hunt. After he'd hunted for a but we excitedly asked, "Did you find them all Daddy?"

"No, I couldn't find all of the eggs."

"That's because we buried them!" I can't even remember why we thought that was a good idea.

We never buried eggs, but we did once leave one out for a week before we found it. My mother had hidden it in the sandwich bags box.

Deviled eggs!! If you're already boiling them anyway, that's easiest. Just cut them in half long-ways, scoop out the yokes, and mash em up with . . . uh, a whole of bunch of stuff. Just now realizing I sort of make up that part. Mayo and paprika are the important bits.

We like to add sliced or diced hard-boiled eggs to curry. Rice, curry sauce, then eggs and peas and mandarin oranges and nuts. It's like building a salad: no matter how small you plan for, there's always a big heap by the time you've put it together.

I'm fond of egg salad sandwiches, with not all of the yolks, a bit of mayo, some diced scallion, diced celery, and a teaspoon of dill pickle relish. But deviled eggs are faster to make, and more people will eat them faster.
