When it's not completely stiff and denting it leaves an impact-print on the meat rather than just making your hand hurt? *grin*

I usually cheat with chickens, at least, and just stick the thing in there half-defrosted, or still frozen. It doesn't seem to make any difference in tenderness or anything -- I just cook at a lower temp if it was starting from frozen.
