It's my (livejournal's) anniversary party! Yay! *dances* Okay, guys, start celebrating and commenting and everything. I want a comment from each and every one of you, which means I should have...

Yes, that's right, I've now got 199 mutual friends (two of whom are me). Now, I know some people have to be reading this and not my friend - please, friend me. I'm begging. I hate the number 199. It's just oh-so-close to 200. You can add me and then delete me tomorrow, it'd just be cool to have 200 friends on my first anniversary.

And I made a serious tactical error today and ate a slice of pizza. TWO slices of pizza. My stomach is killing me. Years, my mom took, so that I could at least digest dairy products, and I undid it in one swell foop by not having any for (about) a month to see if casein affected me badly. Well, it didn't affect me nearly as badly as lactose now does. Gah.

Really, what I ought to do is go practically and build up a tolerance slowly. Or just quit it with the cheese. But no, what do I do? Eat a quarter of a pizza!

So, go on. Celebrate! Comment! Give me dairy-free recipes I can cook!

I like tofu-chorizo and eggs. Put tofu-chorizo in pan, scramble it up, set aside, scramble eggs add tofu-chorizo and serve with warm tortillas.

Why dairy-free? Are you allergic to milk or lactose intolerant?

Well, I was always a little allergic to cow's milk. But my mom worked hard to help me build up a tolerance. And then I went off milk for a little bit to see if I was being affected by the casein. When I went back on, I'd lost my tolerance of lactose. Most adults are lactose intolerant, or would be if they'd stop drinking milk.

Yay for journal anniversary!!

I don't eat much pizza because of grease (no fast-food pizzas...Puizza Hut is about the lowest my stomach can toplerate)...so I sort-of feel your pain.

I know there's a vegan cheese that the local after-midnight grill uses in its dishes. I figure as long as it's used in a good recipe, it's OK, but I doubt it would taste very good on its own. Which brings me to an unrelated expensive goodie I occasionally indulge myself in: the no-guilt vegan jerkee called Stonewall's Jerquee (http://www.veganessentials.com/catalog/stonewalls-jerquee.htm). Yum! They microwave well, too, for a sizzling snack.

I think I've posted my one "original" recipe: pepper ring burgers. If you want that, then post a reply here and I'll post it. It's pretty simple.
