Many years ago now, I found sweet potatoes in my yard

They'd ended up there and rooted and sprouted due to the actions of some child who threw them out the window some time earlier.

If I had a sweet potato on my desk that I didn't realize was there until it sprouted, what would be the best way to plant it on purpose? I don't want to trust to the window method a second time.

I figured that like potatoes you cut them up with a sprout in each chunk and plant the chunk. According to what I found through my lack of "Google-fu" abilities on the net, that's not the case.
