I made crepes this morning!

And they had a secret ingredient, or rather, a secret non-ingredient. I got the idea off of google - instead of making a batter, I just beat the eggs and added sugar and vanilla extract. Then I folded it over strawberries once cooked. Jenn liked it, and Evangeline ate it, but Ana saw right through my ploy and accused me of sneaking eggs into her diet. Sigh. She did eat the strawberries, though. I am absolutely going to make this again, but next time I'll put a little yogurt on the side for Ana.

So, sugar eggs? Did it taste like an omlette or was it really more like a crepe? I like the idea of going flourless, but I'm not so sure about adding sugar to my eggs. Sounds like you plan on making it again though, so I guess it was pretty good?
